Skillet Chicken with Pasta, Spinach and Garlic Oil



A delicious and easy one-skillet chicken dish with pasta, spinach, and flavorful garlic oil. Perfect for a quick weeknight dinner!

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 200g pasta of your choice
  • 2 cups fresh spinach leaves
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions:

Add salt and pepper to the chicken breasts

In a pan, heat the olive oil over medium-high heat

The chicken breasts should be cooked through and browned after being added to the pan

This should take about 6-7 minutes per side

Take it out of the pan and set it aside

Add minced garlic to the same pan and cook for about one minute, until it smells good

In the meantime, cook the pasta until it's al dente according to the directions on the package

Remove the water and set it aside

Put spinach and garlic in the pan and cook for about two minutes, until the spinach wilts

Cut chicken breasts that are cooked into strips

Put the cooked pasta and chicken strips back in the pan and toss them with the spinach and garlic oil

Put chopped parsley and grated Parmesan cheese on top of the skillet mixture

Enjoy while hot!
