Lemon Pucker Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 and 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup powdered sugar for dusting
Instructions:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the eggs, one at a time, and then add the vanilla extract, lemon juice, and lemon zest
Mix well
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients and mix until just combined
Cover the dough with plastic wrap and refrigerate for at least 1 hour
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Shape the chilled dough into 1-inch balls and place them on the prepared baking sheet, leaving some space between each cookie
Bake for 10-12 minutes, or until the edges of the cookies start to turn golden brown
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes
Transfer the cookies to a wire rack and let them cool completely
Once cooled, dust the cookies with powdered sugar
