Chicken Stock Soup



A comforting chicken soup made with homemade chicken stock, hearty vegetables, and tender shredded chicken.

Ingredients:

  • 1
  • 5 liters chicken stock
  • 200g cooked chicken, shredded
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

In a big pot, heat the olive oil over medium-low heat

Put in the celery, carrots, onion, and garlic

It will take about 5 minutes of sauting until the vegetables are soft

Add the bay leaf, thyme, salt, and pepper, then pour in the chicken stock

Bring to a boil, then lower the heat and let it cook for 20 minutes

After you add the shredded chicken, let it cook for another 10 minutes

Check the seasoning and make changes if needed

Enjoy while hot!
